Message There is a LOT of research to be had on Google.

Basically, Here are your options;

Full vynal/composite tile;
pros: amazing wear properties and heat rejection
cons: can chip if tools are dropped or you use non-padded jackstands

Carpet;
pros: amazing cold weather and warm weather comfort
cons: it attracts leaves, gets dirty relatively easily, moisture goes unseen
(ps, i pull my carpet back when I do a big job, like my tranny pull this past week... I use two 6 foot x 3 foot pieces of carpet to get all dirty and nasty on, but keep me from freezing to the concrete floor)

Coverings;
(such as the perforated plastic shop garage mats (think 'mobile basket ball courts'))
Pros; easy to clean, lasts forever, and looks great
Cons; Incredibly expensive.

Coatings;
there are basically two different types
Latex; is known to be pure and total crap. Do not be fooled. It will lift soon and create an ugly and aweful mess.
Epoxy; if prepared correctly, it will last 5 to 10 years without lifting.
The UCoat it products (@$500.oo) do seem to be the hands down winner in all my research (forums / message boards). The more activity your garage sees tho, the less life the product will have. (BTW epoxy coatings will not with stand jack stands either, so pad them with 2 or three pieces of carpet, or some custom fit 2 x 4s).

You will need roughly 1 month to apply any liquid based roll on coatings.
There will be 4 to 5 days (1 week-ish) for preparing the surface. If you get anxious and do this step wrong, your coating will last 1 to 2 years MAX (specifically lifting where you park your car(s))
After that, you will need to apply at least 2 coats of the Ucoat product, letting it cure 1 to 2 days between coats. Then you will need to let it cure for 2 weeks, un-interupted.
With the colder weather approaching, surface preperation and cure times will take longer.
